I forgot that I had also baked Rose’s Red Velvet - doubling was not a success, but baking a single layer as RHC specifies was wonderful.

IT LOOKS LIKE HEAVEN! I JUST WANT TO KNOW WHAT HAPPENED WHEN YOU TRIED TO DOUBLE THE RECIPE? I WANT TO EXPERIMENT WITH A 10 X 2.

Congratulations on a beautiful and delicious cake!  Did you use food coloring or beet juice?

gaviota4fly - the biggest issue I recall was that the cake was very dry… it could be that I left it in oven a little too long… but I recall thinking it needed more time.  That is, it did not seem complete in the center.  I also want to try it in other sizes. First, I think I will try doubling again.  I want to make a red velvet wedding cake…

Julie - I used food coloring - someone commented that they recall Red Velvet being darker - but I thought it was a perfect red and did not find more red necessary.  I used the amount of food color RHC called for.
