that is just one parameter, the other is that there is far more horizontal pull than vertical, been a cake much wider than taller.  when i used my tortenboden pan, GREASED/FLOURED, nothing shrunk during cooling, still on the pan (silicone pan thought) and never upside down.

That’s a wonderful angel food cake, congratulations!
I am planning to bake it soon and would like to know what frosting you used.
Is it Chocolate Chip Whipped Cream?

Thank you Felix, yes, it is the chocolate chip whipped cream with almonds.  It is paired with the cake recipe in the book.
