Nobby Apple Birthday Cake for My Mom

My mom sent me a recipe for Nobby Apple Cake. She loves it, so I baked it on her birthday, even though we live too far apart to visit. I tweaked the recipe to follow Rose’s method of mixing a cake, and used whole wheat flour, as I often do in cake baking. I made two versions of the same cake, and both are winners. Happy Birthday, Mom!

I have never heard of ‘Nobby Apple Cake’ but it sure looks good.  I like the idea of using whole wheat with it, adds a little more nutrition.

Thanks for the compliments.

MonMom, I’d never heard of a Nobby Apple Cake before, either. When I “googled” the name, I found many recipes on the internet. Some are spelled “Knobby”. My mom says the name is for the “knobs” of apple in the cake.
I find that when I use whole wheat flour with Rose’s mixing method, I always have tender cakes. It is easy to “Rose” most cake recipes. Her method rocks!
