I’m sorry rozanne, I should have typed in white chocolate wafers. I have the bittersweet ones which are 58%. I want to see if the white piccoli wafers have a cocoa butter mass of 30% or higher. If they don’t, I will have to buy green and blacks white chocolate.
I am making a carrot cake for next weekend and I am going to use Rose’s dreamy creamy white chocolate icing. I have never made it before but I have read that the white chocolate needs to have quite a high percentage of cocoa butter in order for it to have the proper consistency.
