Liza, which one do you have, the white, dark choc or milk choc? I think it varies. I can give you the info for the dark one if you want. If not, let me know which one and I’ll call the Lindt outlet and find out for you.

I’m sorry rozanne,  I should have typed in white chocolate wafers.  I have the bittersweet ones which are 58%.  I want to see if the white piccoli wafers have a cocoa butter mass of 30% or higher.  If they don’t, I will have to buy green and blacks white chocolate.
I am making a carrot cake for next weekend and I am going to use Rose’s dreamy creamy white chocolate icing.  I have never made it before but I have read that the white chocolate needs to have quite a high percentage of cocoa butter in order for it to have the proper consistency.

And thank-you very much for finding this information out for me.  You are so helpful grin

No problem Liza. The white chocolate has 36% cocoa butter. You are going to LOVE the carrot cake and the white choc icing. It’s the BEST carrot cake I’ve ever had. Save me a piece.  smile
