I was just looking at our huge jar of home-made bread crumbs and thought I recalled having heard of breads that use toasted bread crumbs as an ingredient. Maybe it was a type of pumpernickle?

Anybody have any pointers to recipes like that? Have you ever tried it?

Check Rose’s variation for pumpernickel altus brat.  That’s the closest think I can think of—but your bread crumbs might be too dry for that.

I’m not familiar with bread recipes that call for bread crumbs, but I’ve always been partial to pasta with bread crumbs and oil.  Rose has even written about it here:
