I am looking for a new Angel Food Pan and am not sure which one to buy. Currently, I have a non-stick, two-piece, straight-sided tube pan, but it is my understanding that non-stick is not best. What brand of pan have you been successful with? Rose mentions the Wilton pan in RHC, but I am a little leery of Wilton and see negative reviews online. What are your thoughts? I really want to bake the Chocolate Tweed Angel Food Cake!

I have a cheap cheap cheap angel food pan that I bought in what my Grandmother called a Schlock Store (Junk shop).  It performs perfectly fine.  All my other pans are really expensive (I bought quite a few at Williams Sonoma)...but that Angel Food pan has never given me any trouble.  If Rose recommends the wilton…I’d go with it.

I was going to say something similar. My AFC pan is the only one I don’t really care if it is top of the line—seems to work just fine.  Mine is non-stick, but doesn’t seem to make any difference (the cake sticks plenty, believe me, I hate cleaning it). The sides are slightly sloped on mine too, I guess I might pick something with straighter sides next time, but that is purely visual.  I have some photos of my AFCs on this thread:

Don’t forget to think about capacity too. Rose’s recipes are for 16 cups. Mine is that size.

You can always make the angel food cake in cupcakes form. I’ve tried it and it works really well.

Thanks for everyone’s help and input!  It is much appreciated.  I’ll probably take my chances on the Wilton since Rose recommends it, too.
