I was going to say something similar. My AFC pan is the only one I don’t really care if it is top of the line—seems to work just fine. Mine is non-stick, but doesn’t seem to make any difference (the cake sticks plenty, believe me, I hate cleaning it). The sides are slightly sloped on mine too, I guess I might pick something with straighter sides next time, but that is purely visual. I have some photos of my AFCs on this thread:
Don’t forget to think about capacity too. Rose’s recipes are for 16 cups. Mine is that size.
