checkerboard cake

Hi everybody,

  I was wondering if any of you have used a chocolate ganache on the checkerboard cake? I’m making one of these cakes for a bake sale next week and I wanted to use the chocolate ganache, but since I’ve never made this cake with the ganache I’m not sure how well it works with it. I love chocolate ganache. It’s easy to make and it tastes great (imho). My concern is that it might be too rich and overpower the flavor of the cake. Any thoughts and opinions on this will be much appreciated.

Good morning!  I’d use the milk chocolate ganache in the cake bible…not quite as intense as the one made with bittersweet chocolate.  The checkerboard cake, although is technically half chocolate, really has the flavor profile of a yellow cake.  The amount of chocolate added to the 1/2 of the batter doesn’t really turn this into a “chocolate cake” and I think the bittersweet ganache would over power the cake…but the milk chocolate ganache would probably be better.
