The recipe makes 22! - I presume I can halve all ingredients for fewer pancakes?

These were THE best - lightest pancakes I have ever made.
Whipping the egg whites separately is the key.

If you have not tried them go to the Cake Bible.

Now I am dieting for the rest of week. Sigh!

Paul, I hear you.  I made these once and my husband said they were the best he’d ever had, EVER.  And yes, when I made them I made a half portion, no problem.  Not really being a morning person (though I’m much better than I used to be, kids and all…), I don’t often feel like going through the effort of making these, but they are sublime. 

If you like pancakes, try the crepes- I made the lemon crepes suzette variation for a brunch dessert (served with fresh berries and whipped cream), and really liked it.
