Barcelona Brownies Inspire Mexican Ibarra Brownies

I wanted to make a Mexican version of brownies, using Ibarra chocolate, the chocolate popular in Mexico for making hot chocolate and for using in mole sauces. Rose’s recipe for Barcelona Brownies was a perfect fit, producing a truly luscious brownie with the ganache filling. Details, recipe and photos can be viewed on my blog.

Yum! I find the gritty, sugary texture of Ibarra chocolate intriguing. What a brilliant idea to try it in brownies!

Christine, I like the large sugar crystals also, but most bakers (and eaters) expect smooth chocolate. I’m going to continue to experiment with Ibarra chocolate in the future. The worst that can happen is that I will have to eat my failed experiments.  smile
