The Fresh Market and Meyer Lemons

The Fresh Market, based in south eastern USA, is apparently expanding significantly.  One just opened not far from me and consumed a bit of my time today..  I went for the Valrhona chocolate tasting but explored the store and found they do have some Valrhona on the shelves.  I was looking for Les Perles but they only had the crunchy ones.  In addition to my fresh salmon, I left with three Meyer lemons and some vanilla bean paste.  I grabbed the lemons but had no idea of what I am going to prepare.  I was afraid to get more since I did not have a plan.  I do not have a plan for the lemons I already had on hand.

Hi Renee,
Meyer lemon zest is wonderful, the juice is ok, not that special in my opinion. I’d make something that showcases the lemon zest well, such as a lemon poppy seed cake, or perhaps a Meyer lemon flavored cheesecake? That would also take some of the vanilla bean paste, so you can have it all at once!

That is a good idea, Silke, thank you.  I have only made cheesecake once before and this would be a good exercise for me.

The Cordon Rose Cheesecake is wonderful. My only advice would be not to use a springform, but a closed pan to avoid having to wrap the pan in aluminum foil for the waterbath - I’ve had disasters with that method…. It’ll be soooo good with the Meyer lemons.
