Im thinking of pairing Roses Golden Almond Cake with a Peach Buttercream.  Possibly adding Peach Puree to SMB.  Anyone have any thoughts or have done this before?

I haven’t paired this cake with peach, but I have paired it with apricot-vanilla mousseline, it was a wonderful combination.  I used vanilla extract and Rose’s apricot lekvar.

Almond and Peaches are a great combination - all from the same family actually: cherries, plums, peaches, apricots etc. all contain almonds in their stone - the fruit-almonds are the bitter variety. Sweet Almonds go really with all these fruits.

Lovely idea with the Buttercream.

Also apricot purees, and peach etc. can be used in Italian meringue with great effect. Be sure to seive the heated puree before pouring onto the whipped egg-whites.
