Sticky toffee pudding- substituting guiness

Hello,
I am planning to make the sticky toffee pudding for dinner tomorrow. As we do not consume liquor I would like to know what can I use to substitute the stout beer.
Please Advice.

Zerin, possibly brewed coffee, but it would be an experiment and might not work out, as water and alcohol behave somewhat differently in cakes.  If you’re not willing to experiment, it might be better to select a different recipe.

Zerin, there is usually a way to exclude alcohol where Rose calls for it in her recipes. As Julie notes, a little experimentation is what’s needed. Rose herself took a cake almost based on Grand Marnier and redesigned it for her many fans who don’t use alcohol for one reason or another. The result was the recipe of which she is most proud in the new book - her Golden Lemon Almond Cake!

Happily, a quick review of more traditional sticky toffee pudding recipes reveals that the switch to a non-alcoholic version is simple. Use boiling water in place of the beer. Pour it over the pitted dates. Add about 2 tsp of coffee essence along with the baking soda, and I would think you could add the vanilla at the same time. Set aside to cool, and then continue with the recipe as written.

I have a recipe for the original Sticky Toffee Pudding which does NOT have any alcohol in it!  As Carol says you can use boiling water to replace the stout and some coffee.  In my recipe the coffee used is Camp coffee, a liquid not very often seen now but I think it is still available, if you can’t find it just dissolve some granules or powdered coffee in water.
I also welcome you to our forum, you will make lots of friends here and get lots of help when you need it.

Zerin, I have made sticky toffee pudding only twice and the recipe I used didn’t have any alcohol in it. It used boiling water and it definitely worked. Good luck and let us know how yours turns out. I’m sure it will be delicious.  smile
