substituting regular cocoa for dutch-processed?

I always use normal cocoa instead of Dutch process, and it never makes a difference…

Like you I use what I can easily find or buy.  I do not go on a mission impossible or exploring the world to look for one ingredient, unless I am in a major baking competition.  But that’s just me.
