I’ve made the coconut cake and really liked it as well. Agree with you that the ingredients are not expensive and I’ve spent more on chocolate cake with chocolate ganache.
Oh Matthew - absolute perfection, as usual!! I would do just about anything for a slice of that coconut cake! LOVE your photos, and your consistently flawless execution.

Matthew, Thank you, I appreciate your compliment too. Your description was right on target. The cake is so moist and no it doesn’t taste like Tomato Soup. You would never know that it was in the cake or in the ganache. Love, love, love the 7inch pans. Thanks again Matthew!

You probably don’t need to hear this again, Matthew, but these cakes are so beautiful (and so beautifully photographed) that I never tire of revisiting your post to gaze at them….not sure whether that is a tribute to your skills or just makes me sound strange, haha! Seriously though, I aspire to create a cake as gorgeous as one of these. I’m still at the stage where I’m happy if all of the science works and it tastes great. Aesthetics to follow soon, though, I hope!
