I am new to this blog, but I happen to read your post and felt so bad for you. I think the cake was done beautifully. Do not sell yourself short. I have never worked with fondant and have made cakes for 32 years. I applaud your excellent work. I have had waitress’ tell me that a couple of my cakes were dry that I scratch made from Rose’s Cookbook, but these were cakes that were left in the cooler and not set to room temperature and they were also used to box cakes or cakes from the wholesaler. I have found that putting the flavored simple syrup on the cakes before filling makes a huge difference.

Thank you Maddie grin  I am glad to have all of this support, I always dreaded my first “cake wreck” and cannot think of a better time or place to have experienced it than with all you surrounding me supportively. I feel so blessed to have found Rose’s site and all of the beautiful souls within. So blessed!

Wow, I can’t believe your cake got such bad reviews, especially after you sampled it and knew it was delicious.  How much time elapsed from baking to serving?  Btw, it’s absolutely one of the cutest cakes ever!!  Very much like the super mario cake that hit the scene with a bang a few years back, but I actually like the softer colors you used even better.  Some people complain just to see if they can get a refund, others to get a fee cake in the future.  So sorry this happened to you.

Thanks for the words of comfort Patrincia. It was such a disappointment. It was baked on Thursday night and served on Sat. It was kept completely sealed, and refrigerated after cooling. It was not refrigerated prior to serving. I continued to sample the test cakes EACH DAY to make sure the flavor wasn’t turning. That cake does not last long, but it certainly tasted great the day of serving, considering my scraps were NOT sealed like the cake was!  She’s getting her free cake alright, straight from a box this time! snake
I even made another order with the same batter that day, and carved it into what I lovingly named “The Chockroach Cake!”. It was for a local pest control company’s display table at the home and garden fair. Perhaps I should post it just for kicks, I don’t know though. This is such a sophisticated forum!

Jessie, your cake looks amazing. So sorry you had such a bad review. You can’t please all of the people all of the time, so chalk it up to experience and continue making beautiful cakes. I just visited your blog and your cakes are absolutely beautiful You are soooooooo talented.

Awww thank you Rozanne. I really appreciate that. I have decided to not make any more cakes (for clients) for the last few months I am here, we leave in July. In that time I am going to study Rose’s recipes, make them over and over again, and put together a solid menu of textures and flavors with descriptions so that when I start baking in Abu Dhabi, I am better prepared and have recipes to work with that aren’t new, that I can stick up for when people tell me they are disgusting. It is one thing to satisfy someone unhappy, truly another to take verbal abuse. I need to work up a better game plan so that if someone is unsatisfied in the future, I can handle them in a fair manner but without being walked over and just “taking it”.

Adorable cake with lots of attention to detail. Sounds like you have a good business going so I’d chock it up to someone looking for something for free and try your best (hard, I know) to move on to bigger and better cakes (and better customers).

What an adorable cake!  I agree with all the above posts, some people are never easy to please, and I’d bet that these people are known for complaining.  All your cakes on your blog look amazing and you should be proud of your work. 
I’m sure they will enjoy the box cake, it is all a matter of palate, or lack of.  smile

Thank you Montanamom123 =) I love how you all can say everything that I can’t as a matter of civility! LOL I really hope they like their boxed cupcakes too; they will have icing sugar frosting on them at least. I don’t have the heart to use the canned stuff! That would just be too much cool smile
