I cannot find my copy of the Pie and Pastry bible, and tomorrow I need to make 20 strawberry rhubarb tarts! The shells are already done and tomorrow I need to make the filling. I am sure the book will turn up as soon as I am finished (we looked all over the kitchen yesterday but couldn’t find it) - my local bookstore doesn’t have it in stock and I can’t get to the big bookseller today in time.
Could someone PM me with the filling weights? I can’t remember the sugar/fruit/cornstarch ratio and can’t afford to experiment because these are for an important client.
