Hi,
I am toying with the idea of baking ladyfingers for the RHC Lemon Canadian Crown.  I haven’t seen ladyfingers in my local Safeway or Whole Foods so I may be forced to, anyway!  I can only hope the end result is half as beautiful as Julie’s was… 

Anyway, I see that a 3/4 inch pastry tube is needed, and was trying to see which model number this might be in either Wilton or Ateco tips.  I have an Ateco 808 (Plain #8), which is 5/8”, but I’m afraid this will be too small.  I see they make an 809 (Plain #9) which is 11/16”.  Is that the closest one to 3/4”?  Search as I may, I couldn’t find which Wilton number/model matched to 3/4”. 

Also, I think I may have to order online, as I have looked at Michael’s, Williams-Sonoma, and Beverly’s with no luck…

Loopy, thanks for thinking my ladyfingers are nice!  They aren’t so terribly difficult, definitely use the Wondra and just remember that they are very fluffy, so don’t do anything to compress them.  And you can fix little flaws with your fingers after they’re piped, if you need to. 

As for the tip, I have piped them with just the bare opening of a plastic-lined pastry bag (no tip), which measured 3/4”.  Recently I bought these tips:  http://www.foodservicewarehouse.com/matfer/167114/p368673.aspx

I don’t think the polycarbonate is necessary for plain tips, but I was ordering star and french tips and needed that size so it was convenient to include it.  They haven’t arrived yet, but the next time I use them I’ll post the results, including any difference between the tip and the plain bag.
