Mini Lemon Cheesecakes

This was my contribution to the refreshment table this past Sunday. While this cheesecake recipe was to yield 24 mini-muffin sized cheesecakes, I ended up with 24 cupcake sized ones and with batter to spare! They’ve got a graham cracker crust and are topped with TCB’s Lemon Curd (my favourite ) The lemon fanatic at church gave me high five with her mouth still full!

Really pretty baby cheesecakes. I have made this also with lemon curd, which I love. They look like fresh sunny-side-up eggs, which I also love.
