Non-dairy substitute for milk powder?

Hello all,

Dairy products and I don’t get along so well, but I really want to make the soft sandwich loaves in The Bread Bible.

Any suggestions for a non-dairy substitute for the powdered milk listed in the recipes in that chapter?

Do you like coconut milk? That might work, if you like the taste.

Otherwise, I would say to omit the milk powder altogether and just use straight water.

I don’t use milk powder as I think all the goodness has been taken out of it so would just leave it out.

Hi everybody,

I’m the OP on this thread and I thought I’d post an update.  Turns out, the commenter who suggested omitting the milk powder was spot on.  I left it out entirely and my sandwich loaves were delicious.  I had no idea sandwich bread could have so much flavor, and the texture was divine: moist and pleasingly dense.

Attached is a photo of my beautiful loaf!
