Hello:
I’m trying to buy a heated display case to keep Cuban pastries warm (and flaky), but i encounter a dilema. Should i use a Dry heated display case OR a humidity controlled case? If you have any advise or info please post something. I have no idea which one would be better to have the pastries ready to serve my customers.
