I assume you mean the flourless Chocolate Oblivion Truffle Torte that contains only chocolate, butter, and eggs???
If so, sounds like it was overbaked. Do you know if your oven is calibrated properly? Where did you position the torte in the oven (center, top, bottom)? What size eggs did you use? Did you bake in the waterbath as instructed?
Additionally, Rose give the following tips (page 86): “for a moist airy texture, be sure to add beaten eggs to chocolate mixture and not the chocolate to the eggs”. Also, “Chill thoroughly before unmolding”.
