what is the correct amount of flour to be used for the croissants on page 498 of the P&P.  I do not have the reduced bran flour so will be using AP.  What is the correct total amount   291 grams? or 266?

Don’t have my books in front of me, but if you have it, you can cross check the Bread Bible as the recipe is in there as well. In the BB, I remember that the reduced bran flour is replaced with UAP, bran, and germ.

Thank you, Matthew,  I do not have the Bread Bible, so I used the lesser amount of flour.

Check the chocolate croissant, I think it is following the regular.  It will give the correct AP amount.
