Ideas for for mousseline pairing!

Interesting discussion!

I was going to post a thread asking about which chocolate cake is good paired with strawberry/raspberry cloud cream, but now I am intrigued with this white velvet cake. It is the only cupcakes I haven’t tried from RHC for one thing, so maybe it’s time to try it. I am planning on making a heart shaped cake and decorating it with the cloud cream - still undecided between strawberry and raspberry.
Does this sound like a good flavor combo?

it sounds wonderful!! =) 
if u check show and tell i ve posted the cake i finally endd up making
it was a white cake very very similar to the white velvet and i filled it with raspberry mousseline and chocolate mocha buttercream and covered it with whit chocolate mousseline. it all came together very well.so im guessing urs will taste just brilliant with either the rasp or the strawberr yclous !

Jenn, strawberry or rasberry cloud cream sounds like it would be lovely with white cake!  If you make the strawberry, you don’t have to strain out the seeds (I’m a strawberry fan, what can I say). smile

They also pair well with chocolate genoise (like the Strawberry Maria).

Ninuh, I saw the picasa picture. They all look wonderful and beautiful. Love the decorations!

Julie, I thought of strawberry maria but I can’t use alcohol for the genoise au chocolat (one of my friend is pregnant). Can I syrup it without liquor and would it still taste good?
Why do you say not to strain the seeds? Is it for the visual effect?
