Doubt regarding Chocolate cake baked in a Baine Marie

Am making a Chocolate cake which is supposed to be baked in a Baine Marie..am always concerned abt water seeping in, inspite of the aluminium foil that I use to cover the bottom of the springform pan.

May I prepare the pan like how Rose does for her cheese cakes, like put the silicon pan inside the springform pan, and then put it in the Bain Marie..will that not work for the chocolate cake too and bake just right ? Thanks.

Sharon, it seems to me like it would be worth a try, but I haven’t done it.  The nice thing about Rose’s recipes is that they are thoroughly tested and perfected, so you know going into it that her recommendations work.

AHHHHHHHHHHHHHHHHHHHHHHH! the springform pan goes in the silicone pan, not the other way around.  It should work fine. I usually use the wide roll of heavy duty aluminum foil…two sheets…and have never ever had seepage.
