Has anyone attempted to make Rose’s Angel Food Cake in RHC gluten-free? In other books, I’ve seen suggestions for using potato starch, and/or matzo meal (for Passover). Has anyone had any experience with that?

i made the genoise rose with all corn starch and it was pretty good.  definitely try it.  these cakes don’t depend on gluten developement.

FYI-I don’t think matzo meal is gluten free. It is made with flour.
There are lots of recipes online for gluten free angel food cake. You might also try the Tartelette website-she makes a lot of beautiful gluten free pastries.
