Has anyone attempted to make Rose’s Angel Food Cake in RHC gluten-free? In other books, I’ve seen suggestions for using potato starch, and/or matzo meal (for Passover). Has anyone had any experience with that?

Thanks much,
Hana?

FYI-I don’t think matzo meal is gluten free. It is made with flour.
There are lots of recipes online for gluten free angel food cake. You might also try the Tartelette website-she makes a lot of beautiful gluten free pastries.

Thanks Hector. I will try corn starch and see. Good to know that corn starch works for genoise too.

Jan, you’re right. Matzo meal is not gluten free. The recipe I was reading mentioned that it was OK for passover. Thanks for the tip on Tartelette. Will check it out.

You’ll be glad you did!  It’s a gorgeous site!  http://www.mytartelette.com/
Personally, I have to limit my exposure, as the beautiful things here are already backing my baking up for years to come—I can’t risk a daily dose of another great site!!
