I keep my instant yeast in the fridge.  Should I bring yeast to room temperature before using it in recipe or can it be used cold without affecting recipe.

I always use it cold and haven’t noticed a difference in timing.  It is such a small quantity so it wouldn’t make a difference like using cold flour and water.

By the way, I keep mine in the freezer as recommended in the bread bible, so it is even colder.

Good question!.  Correct, it is such small volume, that it will reach room temperature in minutes if not seconds!

I keep my instant yeast in the freezer, and use it straight from there, never had a problem.
