Mousseline buttercream with cream cheese instead of butter, is it possible?

Hi Rose, 

Your Mousseline buttercream from the Cake Bilble is now my favorite buttercream, thank you for the recipe.

I am wondering if I can replace the butter with cream cheese?

Ineke, Rose doesn’t check the forums very often, if you want her to see a post it should be entered over on the blog.

As regards your cream cheese question, I haven’t tried that variation, but cream cheese has a lot more water and less fat than butter, so the buttercream may not emulsify properly.  If you do end up trying it, please report back. smile

I’ve tried adding cream cheese to Italian meringue buttercream, it’s not a great idea smile It doesn’t break or anything, it just tasted awful!
