Thomas the Tank Engine pulls a train of Barcelona Brownies!

Inspired by THIS THOMAS CUPCAKE TRAIN ON FLICKR  (and I’m sure there are many other takes on it) I interpreted the idea for my son’s second birthday with Barcelona Brownies baked in financier moulds, and homemade mini oreos for the wheels.

I posted in another thread about the problems I had with the Barcelona Brownies in the centre cavities of the silicon pan taking much longer to bake - but that’s another discussion grin

I was actually going to use the Domingo cake recipe in the financier moulds but ended up doing the brownies instead because I didn’t have any sour cream on hand but luckily had cream cheese… so that saved a last-minute supermarket run!

L I , those are totally amazing!  Love the concept, the candy cargo, the little wheels, everything!  Makes me wish I had a little boy to make them for!

Happy birthday to Evan!  Those are amazing!  I assume you made the cookie “flatbeds”, too?  All the circles, rectangles, brownie boxes and color!  How did your son ever decide which one to eat, they’re all so beautiful?  My guess is m&m’s, though. Congratulations on an ultra-cute birthday “cake”!

FLATBEDS!!!  So THAT’s what they are called!!  LOL… thanks for that and all the compliments!  I really have to try baking them again in the silicon financier pans. 

Anne - the flatbeds were made from the same oreo cookie dough that the wheels were made from - a King Arthur Flour recipe.  It’s a fantastic recipe by the way - available on their website.  We have had a rainy December/January and it wreaked havoc with the cookies not to mention royal icing, so I would have been much better off using store-bought cookies but I sometimes have a ridiculous and illogical need to make everything that’s edible on the cakes, myself.  I know, it does make life hard…  Good thing I draw the line at fondant figurines and sugar work, although if I do use fondant I feel I have to make it as well.  *rolleyes*  It’s a disease.
