Helenl, it depends. Do you like Pies & Pastries? If you do, Pie & Pastry Bible is a great book. But if you’re more of a cake person, Rose’s Heavenly Cakes is an awesome book. So it really depends on what kind of dessert you like.
If you’re impartial, then I’d go with the Pie book, so you have one of each kind.
Obviously RHC is awesome, but if you can only get one more might as well go with your 3rd interest!!!
If it were a gift are you allowed another or has your cookbook shelf reached it’s limit? What if you promise to give away a cookbook for each new one you get? There must be a workaround!!!!
My skirt collection has reached it’s (very reasonable) limit. No more skirts under any circumstances, so I know where you are standing!
I have the Bread and Cake bibles. I’m allowed one more, if you only had one choice, which Rose book would you take?
I would say Rose’s Heavenly Cakes. All of Rose’s books are fantastic; however, since RHC is 20 years newer than the other books, you will find updated techniques and sources. Everything I have made from that book, in particular, has been jaw-dropping delicious.
Before I purchased The Pie And Pastry Bible, I often rented it from the library, so those recipes would be available to you too.
You might look if your library carries Rose’s Heavenly Cakes. I know mine does. Then you can borrow both, look them over first, maybe try some recipes before deciding.

I am a recent new owner of RHC—It is a beautiful book.
Does anyone know if Rose is working on any new books or new versions of the bread, pie, or cookie books?
Eliz, I believe Rose is working on a cookbook that has everything: bread, cakes, pies, pastries. Not sure when it will be released, but I am so looking forward to it!

Yes, The Pie And Pastry Bible is in it’s 6th printing but, as Rose mentioned, there were only minor tweaks in the 6th and they were relative to punctuaion

She has said that it generally takes her five years to publish a book, and the last one came out a little over a year ago, so we’re looking at another 3.5-4 years or so. And I don’t think this one will have breads aside from dessert breads like brioche. It is a dessert book.

So my next “Rose” book will still be the bread book.
Maybe Rose could be persuaded to add a few candy recipes? A half dozen perfect ones (which hers would naturally be) is so much better than a book full of *sigh* ones!!!! Just the basics, but done to perfection!!!!
