I found a recipe from Australia, by well known restaurateur Bill Granger, for coconut bread. Coconut is something we have a lot of, living in Mexico, but I wanted muffins. The recipe adapted well to low-sugar, whole wheat and muffin size. It is the perfect accompaniment to morning coffee or afternoon tea.
