I have a question…I may be making cupcakes to decorate for My nephew’s birthday and would want to have very rounded tops.  If I am making the white chocolate whisper cake, or the yellow butter cake, do I want to use more or less baking powder for this?

Less.  Or, you can simply let the filled pans sit on the counter for about 1/2 hour before popping them in the oven. This will expel some of the leavening so you get rounder tops.

You might want to experiment with the less leavening or the counter time so you get the exact roundiness you want, though.

increasing the temperature by 25 degrees also gives a slightly rounded top…but be sure you don’t go toooooo hot or you will adversely affect the texture of the cake.

Yup, a little extra heat and a little less baking powder should do the trick.  smile
