This is Rose’s Lemon Meringue Pie from the Pie and Pastry Bible.  All I can say is that it is the best lemon meringue pie I have ever had.

That is some gorgeous meringue swirling!  It really shows makes a beautiful pattern with the browning.  And, speaking of browning, the crust is gorgeous!  I know it’s LM pie, but if I didn’t have any idea of what was in there, I would definitely want a piece of that pie!!!!!!  (Of course, I do, anyway, but I see from your Pie & Patry post that it was quickly and completely scarfed.  Congrats to you!  Drat for me!)

Liza, it looks awesome! Love how high the mound is and the swirls. And it browns so perfectly. I’m not a big fan of meringue either though we did enjoy the lemon meringue cake from RHC.
