Mexicans eat different dishes during Lent that may seem unusual to us. One of these is Torta de Garbanzo, a baked dish of ground, sweetened garbanzo beans, raisins, almonds and cinnamon. When I first learned to make this dish, it was on a metate, a stone tablet on which beans, corn and other hard foods are ground to a flour or paste.
