I would be eternally grateful if you would share the details of this pineapple coconut filling. I have been searching for such a filling as this for an upcoming cake!!
Sorry it took me so long to respond. Bascially, I took a fresh pinappple and cut it into chunks and some sweetened shredded coconut and prcessed it the blender. The food processor will obviously work too. I made sure I left little chunks of pinapples so the filling would have a little bite to it. I didn’t want the filling to be completely puree. I also added some superfine sugar (or you can use powdered sugar) to sweeten it up for my taste buds. Wasn’t that much to it :o)
