Help! I need some inspiration. Somebody asked me for a 60th birthday cake for a party, and they want chocolate. No other instructions except the birthday boy likes his cakes fairly plain, dense and flavorful. Not as dense as Rose’s Choc Oblivion Truffle torte, which is why we talked about a regular butter cake. Probably a 9x13 sheet, possibly 2 layers.
Have looked at all my books, and I’m drawing a blank. Maybe because I couldn’t get any clear sense from her of what flavours they like. Any ideas? Thanks!
Well, if he likes chocolate cake, you can’t go wrong with Rose’s ganache, whipped ganache or raspberry ganache. Maybe a chocolate / orange combination????????
For my taste, chocolate/cherry or chocolate/orange are my first choices. I know chocolate/raspberry is another favorite, but I don’t like raspberries. Or chocolate strawberry shortcake - frost the cake with whipped cream and decorate with chocolate covered strawberries. A chocolate pastry cream filling with strawberries and/or bananas. Black forest cake with cherry filling. Chocolate/orange ganache.
I just don’t get the whole fruit and chocolate thing. Yeechh! Never have liked the combination never will. Fruit fine. Chocolate fine. Together? Bleh. The acid of the fruit ruins the chocolate and the chocolate overwhelms the full enjoyment of the fruit flavor.
I think coffee or nut flavors work well with chocolate and seem to be popular.
If you are very daring. Very very daring. Try licorice frosting with chocolate cake. Wow!
I vote for the light whipped ganache. It keeps the cake very moist, and has a retro feel when used as a frosting to go along with preference for simpler cakes. Be sure to leave it pretty soft so it spreads nicely. It sets up fast.
Last week I made Rose’s chocolate fudge cake then torted and frosted it with a peanutbutter buttercream. I cut mini reesee cups in half and put them on top of the rossettes that I had piped out. Everyone loved the taste combination.
Whatever you make, it’ll be awesome using Rose’s recipes.
Friends in my crowd always ask for ganache filled and frosted chocolate cakes… if he’s a true chocolate lover, pair it with the Chocolate Fudge Cake (both from TCB).
If you don’t want chocolate on chocolate, try the Golden Almond Cake with ganache - Mmmm Mmmm Mmmm!

Oh thanks for pointing this out—I never noticed this before, may have to try it soon. I must be weird, but I really dislike chocolate and orange—and I’ve tried it in countless forms and never enjoyed it. I guess my point is maybe you should run your final decision by them just to make sure. Personally, I would vote for regular ganache—it is hard to beat.
Wow! This thread is like Christmas. So many wonderful ideas. I sound surprised only because for some reason, the forum software didn’t notify me that I had responses after the first one from Rozanne. Don’t know what’s up with that. I hadn’t unsubcribed myself.
Meanwhile I talked with the wife further, and she thought maybe a white chocolate bc would be nice with regular chocolate cake. I was to price things out and come up with a final set of choices for her on the filling and overall design. I kept the options simple and straightforward, since that seems to be thier taste. The white chocolate mousseline bc. Raspberry ganache for the filling, which I’ve never made and have wanted to try. Dark chocolate shavings on the sides. A simple border on top and she wants writing. Like I said, straightforward and (sigh) even a little boring. But with Rose’s recipes, it will taste good! Will let you know the outcome after I hear from her. Have to wait for her call, which has to be when he goes out since she’s trying to keep the party a secret.

I have had the same problem with not getting e-mails notifying me that there have been other posts on the forum. I didn’t “unsubscribe” either. I only get notification from the blog, never from the forum. I wonder why that is….....
Hi Rozanne, I finally made time to browse for a few minutes in the announcements section of the forum site, where various techie issues are addressed. Usually I spend all my time reading about cakes and such! haha Learned that I stop getting email notifications to a thread after not visiting the site for a few days. The forum was set up that way, if I understand correctly, so as not to be inundate members with replies from the more popular threads.
