I need help with a recipe for a pineapple upside down cake that I got from my favorite cookbook. The ingredients just don’t sound right. I found it odd that it’s under the shortening & butter cakes section, yet the only butter called for is in the topping (but none in the batter itself) I’m afraid to bake the cake because I don’t think it’ll come out right. I’ve never baked a cake that did not have butter/shortening/oil in the batter. The ingredients in the batter are as follows:
1 cup sugar
1 cup flour
1 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
1 tsp vanilla
1/4 tsp cream of tartar
2 large eggs, separated
1 egg yolk

Does anyone think this recipe sounds right? I really wanna make it cuz it looks so delicious in the picture, but don’t want to waste all the ingredients if it turns out horrible. Any thoughts?

It looks to me like something is definitely missing!  Why don’t you try Rose’s recipe?  It’s right here!  http://www.realbakingwithrose.com/recipes/RLB’s Pineapple Upside Down Cake.pdf

I’d be curious to know—this recipe is made in a cast iron skillet.  I would think it could it be scaled down for a 9” round baking pan—use a 2/3 recipe.  You might have to “neaten” the pineapple in the end.  What I would do is line the bottom of the pan with round cuts of aluminum foil and parchment on that, so when the cake + foil release, you can peel the foil off.

Good luck in whatever you try!!!

Yeah, the botched recipe goes in a cast iron skillet too. I was gonna try Rose’s at your suggestion, but the link did not work. Anyone have a pineapple upside down cake recipe they’d like to share?

Sorry!  Rather than clicking the link, select all the text bold below and paste it in your browser—then it will work.

For some reason, the whole thing doesn’t ‘make’ the link.

I think the link doesn’t work because it’s a pdf file.

Try it this way. Go to this link:
http://www.realbakingwithrose.com/2007/02/the_missing_pbs_recipes.html

It has a list of recipes, one of them is the pineapple cake.

OMG, Jenn, thank you for coming to my rescue!

Lv2bk, you weren’t doing anything wrong.  It turns out what’s happening is that when the link is pasted into a post like this, it looks normal until you submit the post.  Then it replaces the   symbols that replace spaces with the spaces themselves, and that makes the link not work.

Anyway, Jenn’s link is way better, because there’s so many more recipes plus videos!!!  Thanks!  I’ll be grooving on this page myself!
