Cupcake frosting recipe needed!

Hello!

I love baking cupcakes but I have a big frosting problem. I don’t like the taste of buttercream and cream cheese frosting! I’m desperately looking for a recipe for a “white frosting” which I can color and pipe. I like the taste of pastry cream, but the consistancy is wrong. I want to use tips to pipe flowers and leaves. Is there such a frosting which doesn’t contain massive amounts of fat or sugar or cream cheese?

Hi, toprak!

That’s a mighty difficult request you’ve got there!!!

Maybe some heavily stabilized, lightly sweetened whipped cream? 
Meringue?

These might not pipe with absolute precision, but you should be able to get something pretty going with them!

Good luck!  I’ll be interested to hear if there is an actual solution to your frosting situation!!

Toprak, if you find a recipe, please post! I can’t think of anything without real sugar that I like, as well as fat.

I have used the pastry cream recipe from ‘A Passion for Chocolate’ successfully. You can beat in butter until you reach the consistency you want then it pipes well at the right temperature. If it gets too stiff it is easy to warm it slightly.
