I?m very partial to Rose?s Moist Chocolate Genoise. The flavor is divine, and it makes the BEST Black Forest cake.

I?ve never heard of Nancy Blitzer or her sponge cake, so I couldn?t advise you on how to make a chocolate variation.

Tara, you can try subbing cocoa for part of the flour, but I suspect you may be happier using a different recipe.  Cocoa contains naturally occuring cocoa butter, which will change the texture and height of the cake.  Also, it may taste flat compared to other chocolate cakes as the cake contains no butter to enhance the cocoa.
