Great article, I’m going to interpret it to mean that I need to make as many cakes as possible in order to justify all that expensive equipment!

Thanks for the entertaining article Rozanne - but I have to say I can purchase leading national brand ingredients for less. Still, it’s a very good read.
I should add that I found several books extremely helpful when I was about to make my first wedding cake… Dede Wilson has 2 on the subject and they were among the most helpful.
Oh I agree Patricia. The ingredients would not have cost so much. By the way are Dede Wilson’s recipes good? I don’t have any of her books. Just curious….....
I’ve only used a few of her buttercream flavor variations with Rose’s Mousseline recipe (they were excellent). I haven’t really had an opportunity to try any of her cake recipes yet, but they read very well and I’m sure they are wonderful.
As for practical advise for first time wedding cake makers… she covers just about everything in both books, and she includes tons of color photos throughout.
