Red Velvet success!

My first post! I’ve been lurking on this site for a few months and finally have a cake success!  Just thought I’d share.  I made a classic red velvet cake with cream cheese frosting this afternoon.  Very quick and easy, took about 3 hours total.  I’ve made this cake before, but only in cupcakes for parties.  I had a real desire to just finally make a ‘cake’ cake, and to practice some piping.  Totally happy!

OMG, Doux, do I love your piping?  Yes, I do!  I love that smoooooooooth cake with that circumference of stars and the pearls on top!

What is your trick for such smoother buttercream?  Warm the knife with water and then dry or something else?  It looks really good!

So glad you de-lurked and have joined us!

Surely looking forward to more!

Nope, no hot knife needed. 

I took the cakes and put them on a rack in the freezer for about 10 minutes to get them cold.  Then, I did my filling, put the other layer on and did a crumb coat throughout with room temperature frosting.  I put the whole cake in the freezer again for 5 minutes until the crumb coat hardened up.  Then I did a top coat and stuck the cake in the freezer again for about 5-10 minutes.  Finally I got one last very thin coat with room temp. frosting for finish.  Since the cake was cold and the frosting was room temperature, it spread very smoothly. 

I also use a dough scraper to get a smooth finish on my last coat.  Works like a charm!

I agree with Anne, your frosting looks so perfectly smooth and professional!  And that cream cheese frosting is so delicious with the red velvet, too!

It looks wonderful, love the dragees, love the smooth frosting, and love the texture on the slice- great job!

Are those the red velvet and cream cheese frosting recipes from RHC?

Doux, that cake looks incredible! I’m in awe of how smooth the frosting looks…perfection! Which recipe did you use for your frosting? I tried the white chocolate cream cheese frosting recently and it was so soft—yours looks a bit firmer.
