chocolate mayonnaise cake

I am wondering if anyone has ever successfully made the mayonnaise cake in a sheet pan. I need to find a simple cake recipe to feed a few hundred people. Ideally, the recipe would not have any leftover egg whites or yolks. I was thinking the mayonnaise cake would be great because it’s easy, quick and tastes great, but I’m open to suggestions. Thanks!

I never tried it…but I have made it, and it was very similar in texture to rose’s butter cakes.  I bet it would work fine…but I can’t be sure as I have never tried it.

I’m with Bill, never tried it but I bet it would work.  What size sheet pan are you talking about?  quarter? half? full?  Anything larger than a 9x13 might neeed a leavening adjustment to keep from falling.

I liked the mayo recipe also but alas, I used the recommended pans. As I discovered with the whipped cream recipe, it can take some experimentation to make things work perfectly.
