I’ve been scouring the net for answers to my questions but to no avail. I hope the people here can help.
In Rose’s Bread Bible, she mentions that diastatic malt powder has to be divided between the preferment and the final mix. Is there a recommended ratio for it?
Also, I’m adding vital wheat gluten to the soaker-biga-final dough combination. What ratio to allocate among the three?
