Hi, I need to bake a one layer 16 x 12 x 2 inch white cake for a class I am taking next week. We are going to cut it in half, fill, stack and carve it into a car cake. I saw Rose’s charts in the back of TCB. The closest pan size listing she has is 18 x 12 x 2. The Rose factor for 2 layers is 7 - 8. Since I am only doing 1 layer I will use either 3.5 or 4 Rose factor. I would like to use the 4 to make the math easier. Do I need to leave out some of the batter because there is a 2 inch difference in the pan I am using? If so how much? Also do I have to use a heating core? I don’t think I will because we need to carve this cake. Any suggestions for baking a 1 layer cake in this size pan is greatly appreciated. Thanks. I will try to post a picture if the cake looks decent. LOL
