New cake to share! My husband’s best friend’s birthday was last week and asked me to make a Black Forest cake. He’s French and tried desperately to find me an old family recipe, but couldn’t. He described almost exactly Rose’s Swiss Black Forest cake with a few modifications… but here goes! He’s coming over tomorrow to celebrate, so I’ll have sliced cake pictures soon. I couldn’t wait to post this!
I used the moist chocolate genoise cake, but doubled it so there are four layers of cake. I had to double the recipe for super stabilized whipped cream for the inner layers, and sunk the brandied cherries into two layers. I used the chocolate syrup recipe with Godiva liquor and a teaspoon of cherry extract to moisten the genoise. I also used Rose’s chocolate ganache recipe (I had leftovers from a previous cake) and poured a layer on the top of the cake to run down the sides. Fresh cherries are on top along with chocolate flakes. Hope it tastes good!
