Ditto goes for the cost of making homemade ice cream or gelato. the cost in premium ingredients, and the cost in time. Were I able to find heavy cream that was not ultra-pasteurized (I can’t), the cost would even be much higher. When I’m baking it’s always a tough decision: do I buy the most expensive organic butter, or do I buy something cheaper (such as sold in bulk stores). Just the cost of butter alone, not to mention organic eggs (which I do use) is extremely high. Factoring in good quality chocolate raises the cost even more. Yes, these things truly are a labor of love. When I take bread to a potluck people never realize the time I have put in - it often takes more than a day.
