Hello: Does anyone have experience making marzipan figures and flowers? I have been asked to do some for a baby shower coming up in early December, and need to know how far in advance I can make them. Do they keep well, and if so, how do I store them? I’m assuming in an airtight container, but refrigerated? non-refrigerated? Any help and also advice in the actual creation of them would be much appreciated.

Rose has a recipe to make the right marzipan for modeling on p. 322 of the Cake Bible.  And on p.363, she also has directions for covering a cake or making marzipan roses. 

Her recipe keeps for 6 months refrigerated.
