November Pie Bake Off

I’m a day early but here’s my contribution for November Bake Off: Great Pumpkin Pie from PPB. The crust is the butter pie crust, with a layer of gingersnaps and pecans on top. I followed the recipe exactly, no modifications.

I brought this pie to work as I don’t like pumpkin that much. But I had a lot of leftover pumpkin puree from making the pumpkin cheesecake from RHC and don’t want them to go to waste, so I froze them and use it now. I think if you like pumpkin you’ll like this pie smile.

I made 20% more dough and cut out the leftover with maple leaf cookie cutters. The idea was to attach the cookies to the crust on the side. But absentmindedly I ended up baking them separately. No problem though as I just place them on the pies around the side!

Beautiful and festive pie, Jenn!!!!!  Did everyone at work love it?  I like the idea of the gingersnaps and pecans on the crust under the filling!

Thanks Anne! I haven’t heard any feedback as this was for a big group’s potluck. But there was only 1 piece left, so I guess it means it’s good? smile

What a great idea with the gingersnaps and pecans.  The pie is really pretty.  I like too how you found a way not to waste.

I saw the post about a November bake off; I thought it would be fun to submit this pie (made in October, does that count?)
This is Rose’s Great Pumpkin Pie from PPB, but not exactly…
I didn’t have gingersnaps to line the bottom crust so used the orange hazelnut cookie crumbs instead, and added a bit of maple syrup and just a touch of pure maple extract to the filling.
The filling was just enough to make two, smaller, 7” pies.
The maple leaves were baked separately (using Rose’s instructions for the leaves for her Designer Cherry Pie).

Hello everyone,
Thank you so much and I’m so glad you liked the ‘half-sized-pie’, and the maple leaves.
The pie was oh-so-tasty and I am grateful once again for another of Rose’s beautiful recipes!

Orange and maple with pumpkin…....sounds like a delicious combination. The miniature pie is adorable!
