I would like to try Rose’s Pannetone this coming weekend. The recipe uses chesnuts and I’m not sure I want to use them. Nothing against chesnuts but I would like the typical pannetone that has just the candied fruits. Can I omit the chesnuts? Has anyone done this before?

I’m sure you’ll be fine to put in candied fruits instead of chestnuts, just consider the weight and size of chunks (i.e., don’t put more add-ins in it than the dough can handle, and don’t have any of the pieces too large as they might impact texture or even sink).  Looking forward to seeing it!

I replaced them with citron and maybe more raisins because I like that better. I’m pretty sure I did the same total weight, but it has been a while since I made it.
