The recipe calls for an 8 x 2.5 springform pan. If I use a 9” springform, do I have to adjust the baking time?

Hi Roddy - you shouldn’t have to worry too much, but it might be done a few minutes early.  If you search the blog you’ll find some info on the correct internal temp of a cheesecake when it’s done baking… I think it’s 160F, but check the blog to be sure.
